Apricot grows well and bears fruit in the southern regions. However, the cultivated varietal is too demanding on the climate, unlike its wild relative - zherdely. Yes, zherdela is the same apricot, but it differs from its cultivated counterpart in the smaller size of the fruit, less sugar and a non-edible seed. In principle, it is edible, but it is so bitter that it has no use in cooking. In all other respects, the pole can be used in exactly the same way as an apricot.

Zherdela usually gives a very rich harvest, just have time to process such a quantity of fruits. And many housewives try to simplify recipes as much as possible in order to have time to make more preparations. One of these recipes is making marshmallows from zherdela in the fresh air. In the city this recipe is useless, but for summer residents this is what they need.

To prepare zherdela marshmallow, you only need apricots, sugar and vegetable oil.

Sprinkle them with sugar and beat with a blender until pureed, or grind the peeled apricots through a meat grinder and then add sugar. There is practically no difference. In the first picture, the apricots were twisted through a meat grinder, and in the second they were whipped with a blender.

Sugar should be added to taste.After all, the perch itself cannot boast of particular sweetness, and you have to correct this yourself.

At the dacha there is usually no shortage of free space, so you can use any flat surface for this, even a board, even an old door. The main thing is to keep it clean.

Spread a sheet of baking paper or cling film on the surface and coat it with vegetable oil.

Place the apricot puree on a sheet of paper and smooth it well with a knife, spatula, whatever you like, as long as the layer is even and lies exactly flat. If there is even a slight distortion, the liquid puree will simply flow to one side.

We put the marshmallow to dry in the sunniest place and if you did all this in the morning, then in good weather by the evening it will already “set”.

Bring the marshmallow into the house at night, and in the morning you can hang it on the clothesline to dry. Don't worry, the marshmallow is strong enough and won't tear if no one hangs on it.

By the evening of the second day, the marshmallow becomes translucent and can already be considered ready. In this form, it can be stored for storage or eaten immediately.

To store the marshmallow, it must be very dry. If necessary, cut this path into smaller sheets and dry them in the oven to the desired condition, or again in the sun.

Well-dried and properly packaged marshmallows can be stored for about a year, but they are usually eaten sooner.
