To prepare homemade brawn for 5 kg of meat (4.5 kg of heads and 1.5 kg of jelly-forming products), take 2 cups of evaporated broth, 3 g of pepper, 1.5 g of cinnamon, 1.5 g of cloves, 180 g of salt.

How to make homemade pork brawn.

This preparation is prepared from pig heads and jelly-forming products (ears, legs, skins).

Preparation of brawn begins with the processed pig's head being chopped into pieces and boiled. When the meat has cooled, bones are removed from it and cut into small cubes.

Jelly-forming products are also boiled, the seeds are selected and ground in a meat grinder.

Then, all the components of the brawn are mixed and a strong broth from jelly-forming products is added.

For the casing of the brawn, pork and beef stomachs are most often used, which are filled with cooked meat mass. When the stomach is completely full, the hole in it is sewn up with harsh threads. Then, collect the sewn edge into a bun and tie it with twine. This will prevent the mass from flowing out.

The finished bubbles are boiled over low heat for 2-4 hours, the cooking time depends on the size of the stomach.To determine whether the brawn is ready, it is pierced with a thin knitting needle or needle. If clear broth flows out of the hole, then the brawn is ready.

After boiling, it must be placed under a press in the form of a board with a load, after which it is left in a cool place to cool. The brawn cools for 10 hours.

Homemade brawn cooked in the stomach is stored in the refrigerator. It is advisable to eat it in the near future. If the brawn is intended for long-term storage, then it is canned.
