How to dry eggplants for the winter at home, eggplant chips
Eggplants are quite popular here, but not many people know how to store them correctly. Freezing is a great option, but eggplants are very bulky and you can’t put a lot in the freezer. Dehydration will help, followed by recovery. We will look at the most interesting recipes for drying eggplants.

Air dried eggplants
It is advisable to choose eggplants of the same size, and not very ripe, in which there are not many seeds.
Cut the eggplants into long strips, pierce them with thread, and hang them outside to dry.
Eggplants dry quickly, and after 3-5 days they will be ready for long-term storage.
Dried eggplants in the oven or electric dryer
Wash the eggplants, cut into circles and sprinkle with salt. Now they need to give time to rest and release the bitterness.
After an hour, the eggplants are washed, add a little salt, sprinkle with spices, add a little vegetable oil and mix. Place them on a baking sheet or on an electric dryer tray.
The temperature in the oven is set to 120 degrees, and when drying, leave the door slightly open. Drying will take about 3 hours.
An electric dryer requires a temperature of 50 degrees and a drying time of 6-7 hours.
Storage

For preparing meat dishes, caviar, baking, eggplants should be cooled and poured into a glass jar.
In winter, you just need to soak the dried eggplants for 2 hours in water, and they will return to almost their original appearance. In any case, this will be enough to prepare a stew, or even stuffing eggplants.
To eat dried eggplant as an independent dish, pour a little vegetable oil into the bottom of a glass jar, place a layer of eggplant, a pinch of grated garlic on top, and again a little oil. And again layer eggplant, garlic, oil until you fill the jar.
Eggplant chips
Slice the eggplants into long thin strips. Prepare the marinade:
- 100 grams olive oil
- 50 grams soy sauce or apple cider vinegar
- 2 tablespoons honey
- cayenne pepper, paprika to taste.
Dip the eggplants in the marinade and keep them at room temperature for at least 2 hours.
After this, dry them with napkins and place them in an electric dryer.
At a temperature of 40 degrees, eggplant chips dry for about a day. This can be recognized by the characteristic crunch of the plates.
