The famous culinary specialist, historian and expert on world cuisines William Vasilyevich Pokhlebkin notes in his cookbook that although lavender is mainly used to flavor soft drinks, it goes well with meat and mushroom dishes.

Lavender should be collected during flowering. In Russia, lavender is traditionally collected on the holiday of Ivan Kupala. Then the flowers gain the greatest aroma, and certain magical properties are attributed to them. Believe it or not is not for me to decide, but lavender flowers really should be collected in midsummer.

You only need to cut lavender to a third of the plant's height to prevent it from dying. After all, we only need flowers, so it’s worth saving the plant for next year.

Lavender is dried in the fresh air, tied into small bouquets and hung in a draft.
