How to cook blackberry compote for the winter - simple and healthy recipes

Blackberries and the elements they contain are not afraid of heat treatment, therefore, making compote from blueberries, including with the addition of other berries and fruits, is not only possible, but even necessary.

Blackberry compote with raspberries

The taste of blackberries and raspberries combines perfectly. They are close relatives, but completely different in taste. The sweet raspberries dilute the acidity of the blackberries, and the blackberries add a forest-like flavor to the raspberries.

Blackberries are a very delicate berry, like raspberries, so try to pick them immediately after rain, when the berries wash and dry under their own power.

To prepare blackberry compote we will need:

  • 3 liters of water;
  • 0.5 kg of blackberries and raspberries;
  • 0.5 kg sugar;
  • If desired, you can add a sprig of mint.

Place clean berries in a saucepan and cover them with sugar. Pour in water and set the compote to cook.

Sterilize the jars. As soon as the compote boils, start stirring it gently so that the sugar melts faster. It is advisable to keep the cooking time to 3-5 minutes. Although blackberries are not afraid of cooking, the taste and aroma may weaken somewhat due to long boiling.

Carefully pour the boiling compote into the jar and cover with a metal lid. Wrap the jar of compote with a warm towel and leave it in this position overnight.

Blackberry compote without cooking

Place blackberries in clean, dry jars, about ¼ of the way up.

Pour boiling water over the berries and cover with a lid. Let the berries brew a little.

When all the berries have sunk to the bottom, drain the water from the jar into a saucepan and add sugar to the blackberry broth.

Wild blackberries can be somewhat sour, so the amount of sugar needs to be selected for the specific variety of berries. On average, 1 cup of sugar is added to one liter jar.

Boil the syrup and pour it over the berries. There is no need to pasteurize such a compote; immediately close the jars and hide them under a warm blanket. Long cooling completely replaces pasteurization of compote.

Blackberry compote should be stored in a cool, dark place for up to 18 months.
