Recipe for refreshing kiwi compote with spices
Ingredients:
- 2 l. water
- 0.5 kg kiwi
- 2 cups sugar
- Mint sprig, cinnamon, cloves
Peel the kiwi from the fluffy skin and cut it into rings or pieces. If the kiwi is very soft, cut it in half and scoop out the pulp with a teaspoon.
Place the kiwi in a pan, add sugar, add water, and place the pan on the stove.
Immediately after boiling, stir the compote until the sugar dissolves. Add cinnamon, cloves, mint to the pan and remove the pan from the stove.Cover the pan with a lid and leave it to steep.
Before use, kiwi compote should be cooled.
Kiwi compote for the winter without pasteurization
Sterilize the jars.
Peel the kiwis and cut them into rings.
Place the fruits in a jar, about 1/3 of the way up.
Boil water in a saucepan and carefully pour the boiling water into the jar. Cover the jar with a lid and leave for 15-20 minutes.
Through the lid with a mesh, drain the water from the jar back into the pan and add sugar at the rate of 1 liter of water = 1 cup of sugar.
Place the pan on the stove and cook the syrup until the sugar is completely dissolved.
Pour boiling syrup over the kiwi and immediately close the jars with iron lids.
Cover the jars with a blanket until they cool completely.
The compote should be stored in a cool place. Kiwi is subject to fermentation, just like grapes, so it is very important for it to maintain a cool temperature.
