How to deliciously pickle crucian caviar
Often river fish is neglected, giving the entire catch to the cat, or simply frying it in a frying pan. By doing this, housewives are depriving themselves of delicious dishes that can be prepared from river fish. Have you ever tried crucian carp caviar, not fried, but salted?
Yes, crucian carp caviar can be salted, just like salmon caviar, or other valuable commercial fish. The only problem is the volume of caviar. In our reservoirs they catch crucian carp weighing from 0.5 kg to 5 kg, and then it depends on your luck. From one crucian carp you can take 500 grams, or 50 grams. But in any case, even if you got enough caviar for one sandwich, it’s worth trying to pickle it.
Carefully open the belly of the crucian carp and pull out the bag of caviar.
Using a fork or sharp knife, make several slits in this bag and place the caviar in a bowl.
Boil water in a separate pan and salt it. If desired, you can add a couple of peppercorns or bay leaves, but this is not necessary, unlike salt.
- For every liter of water you need two full (heaped) tablespoons of salt.
Dilute the salt and pour the hot brine over the caviar. The film sacs will shrink and release the eggs, and these films need to be caught. This can be done with a fork or a mixer. Beat the water with the caviar with a mixer and all the films will wrap around the whisk.
The eggs of crucian carp are small, and to salt them, it is enough to keep the eggs in hot water for 30-40 minutes. After the brine has cooled, vigorously stir the water again with a fork to form a vortex.When the eggs begin to settle to the bottom, carefully drain the water and add cold water to the pan. Stir the water again and drain. When the water becomes clear, rinsing can be completed. Place crucian caviar in double-folded gauze, tie a bag, and hang the bag over the sink to drain off excess water.
When water stops dripping from the bag, transfer the caviar to a jar and add vegetable oil. For 100 grams of caviar, a tablespoon of oil is enough.
Mix the oil with the caviar, close the jar with a lid, and let the caviar ripen for 2-3 hours. Salted crucian caviar can be stored in the refrigerator for at least a month if you follow the preparation technology and storage temperature conditions. Try salting crucian caviar, and perhaps it will become your favorite dish.
