How to prepare cucumber juice for the winter
It would seem that now there is no special need for winter preparations. After all, you can buy fresh vegetables and fruits in supermarkets. But not everything is so rosy. Most seasonal vegetables sold out of season are loaded with nitrates and herbicides, which negates all their benefits. The same applies to fresh cucumbers. Juice made from such cucumbers will bring little benefit, and this is at best. To always have fresh cucumber juice and not be afraid of nitrates, prepare it yourself for the winter.
In the summer, you just need to wait for the cucumber season, when the greenhouse ones have already moved away and they just grow in the sun.
Choose large, but not overripe cucumbers for juice. There will be no harm from overripe ones, but they already have less juice and most useful substances migrated to seeds.
Wash the cucumbers and wipe them dry. Using a sharp knife, peel the skin and trim the ends on both sides. If the cucumbers are young, you can leave the peel on.
Now you need to chop the cucumbers and if there are not a lot of cucumbers, you can get by with a grater. If the volume is large, then it is better to use a blender or food processor.
Strain the juice through cheesecloth or a fine-mesh sieve.
How to preserve cucumber juice for the winter? Unfortunately, cucumbers do not tolerate boiling very well and the only option is to freeze the juice in the freezer. An ice tray or special freezing bags are suitable for this. Ice molds are more convenient in this regard.You can wipe your face with a cube of frozen cucumber juice, or add the same cubes to homemade lemonade. Pour the juice into selected containers and place them in the freezer.
The pulp remaining after squeezing out the juice can also be frozen in a bag. This will be a great addition to a winter salad or smoothie.
Cucumber juice can be stored in the freezer for up to 12 months, provided it is not thawed and re-frozen several times.
