I offer a recipe for how to pickle whole small onions. I started making this preparation after I once noticed that my husband was the first to catch and eat onions from a jar of pickled tomatoes. I decided to prepare him a separate delicious crispy pickled onion.

I found a recipe in my mother’s old notebook and prepared it – not only my husband, but also the children liked it. Now, such preparation of onions for the winter is very popular among us and I began to do it regularly.

Marinade for preparing homemade onions (per 1 liter of marinade):

- half a liter of water;

- half a liter of vinegar (9%);

- salt - 2 table. false;

- add sugar to taste (I have 3 tablespoons);

Use the herbs you like for the marinade. And I take these:

- star anise;

- allspice;

- cinnamon;

- Bay leaf;

- hot pepper;

- carnation.

Our homemade onion preparation suggests that it is better to select smaller heads, but in principle you can take the ones you like. The main thing is that they fit in a jar.

Dip the selected onions into boiling water for 2 - 3 minutes, and then cool sharply.

And only after this the onion must be thoroughly cleaned of scales and roots.

Pour the scalded and peeled onion with salted water and let it sit for half an hour.

Then, drain the water, place the bulbs in jars and fill them with hot marinade.

Prepare the hot marinade for the onions before you need to pour them into the preparations.

Many people like onions marinated according to this homemade recipe more than fresh ones. After all, it turns out to be juicier and milder in taste, there is no such strong pungency as in fresh onions.

You can use pickled onions just like other pickled vegetables or add them to various salads, vinaigrettes and even homemade pizza.
