How to freeze eclairs
Real housewives know how to plan everything in advance, especially when it comes to preparing for the holiday. Everything is prepared in advance so that you can devote time to yourself and your loved one. But there are “signature” dishes that require a lot of time, but without them the table is not a table. Let's talk about whether it is possible to freeze eclairs, also known as custard pies and profiteroles.
How freeze the choux pastry we already know. Choux pastry freezes perfectly, but maybe we can go further? What if you freeze already baked buns? What will happen to them?
Let me reassure you right away, you can freeze the bun for eclairs. To do this, bake the buns as usual, cut them with a sharp knife and cool.
Then put the buns in a bag, or better yet, in a container with a lid so that they don’t accidentally get wrinkled or break, and safely put them in the freezer.
Nothing will happen to them for a month or a month and a half, this has been verified several times.
The day before the holiday, remove the buns from the freezer, place them on a baking sheet, and put them in the oven to defrost. In the oven, excess moisture will evaporate, and the buns will not become soggy and the crust will become tender and crispy again. Do not overdry, 5-10 minutes is enough for thin eclairs.
Now you can fill them with cream and leave them to soak. Eclairs with cream can be stored in the refrigerator for up to 5 days.
Some people also freeze ready-made eclairs with cream, but it must be said that when defrosted, the bun becomes moist and chewy, however, some people like it that way.But if you decide to freeze ready-made eclairs with cream, then you should not cover them with glaze or sprinkle them with powdered sugar. This can be done after defrosting, slightly refreshing the appearance of your eclairs, and spending very little time on it.
