How to freeze khachapuri
Delicious Georgian khachapuri flatbreads do not have a single recipe. The main rule is a flatbread with cheese filling. The dough for khachapuri is puff pastry, yeast and unleavened. The filling is prepared from various types of pickled cheeses, such as feta cheese, cottage cheese, or suluguni. Khachapuri can be open or closed. You can freeze any type of khachapuri, but of course, it is better to make it closed. This way the filling will be more juicy, and the shape of the flatbread will not need to be adjusted after freezing.
Knead the dough for khachapuri, divide it into small balls and roll out into a round flat cake. Place the cheese filling in the center of the flatbread and seal the edges.
After this, roll out the flatbread a little with a rolling pin, evenly distributing the filling and giving it a round shape. To reduce the tension of the dough, make a small hole in the top of the cake.
Then, carefully wrap the flatbread in cling film and move on to the next flatbread. You can freeze the khachapuri individually, or simply stack one on top of the other, and then put it all together in the freezer. But take into account the weight of the cakes, and you shouldn’t put more than 5 pieces in one pyramid. This can be done later, when they are frozen enough and do not crush each other.
Before preparing khachapuri, you don’t need to defrost it for a long time, just put the flatbread on a baking sheet, wait until the dough on top becomes soft, and after that you can brush it with egg, sprinkle with cheese and put it in the oven.
