How to freeze boletus
You can preserve fresh boletus for the winter by freezing them in the freezer. There are several ways, depending on what dishes you will then prepare from them and how much time you plan to spend on it.
The most unpleasant thing about butter is the sticky film on the top. Cleaning it takes a long time and is not pleasant. Some mushroom pickers dry the boletus a little before cleaning, then the film is not so sticky and is easier to remove. Some generally consider cleaning the film unnecessary, and clean the mushrooms only from leaves and debris. They are not too concerned about aesthetics, and a slight bitterness adds some piquancy to the taste.
Freezing raw butter.
For this type of freezing, small mushrooms are selected, the most beautiful and preferably the same size. Mushrooms, and especially butter mushrooms, absorb water very strongly, so they cannot be soaked in water for a long time before freezing. Clean the top film and debris, then rinse thoroughly under running cold water and let drain. It is advisable to dry them on a towel so that there is as little water as possible. Place the butter in small ziplock bags and place in the freezer.
Freezing boiled butter
This method is suitable for large mushrooms, broken ones and not very visually beautiful, but no less tasty butter.
In the same way, mushrooms should be cleaned and washed with water, after which large mushrooms should be cut so that all the pieces are approximately the same size.
Place a pan of water on the fire, add a little salt, and when the water boils, pour the prepared butter into boiling water. You need to cook the butter for subsequent freezing for 5-7 minutes, then drain the mushrooms in a colander and leave for about an hour, until they have cooled completely and the water has drained.
Place the mushrooms in bags or boxes, and if they have cooled down enough, you can freeze them.
Freezing fried butternut squash
Fried and frozen boletus will significantly save you cooking time, which is sometimes very important.
Clean and boil the mushrooms as described above. Then put the frying pan on the fire, pour vegetable oil into it, and when it heats up, fry the mushrooms in small portions, maybe with onions.
Just don’t overdry them; it’s better to fry them until half cooked, so they’ll be better preserved in the freezer.
So, the fried mushrooms must cool, after which they need to be placed in plastic containers or bags and placed in the freezer.
Experts recommend thawing mushrooms gradually, but in the case of fried butternuts, there is no need to wait. Just shake the mushrooms out of the bag into the frying pan and simmer them thoroughly, adding potatoes or sour cream.
