How to freeze lemon balm
Melissa, or lemon balm, is considered not only a medicinal herb, but also has an incredible taste and aroma, which is indispensable in the preparation of certain dishes. Usually lemon balm is dried for the winter, but when dried, most of the aroma evaporates, and the color is lost. Freezing is the only way to preserve both.
To freeze lemon balm, you need to select only fresh, just cut branches. You can freeze the whole branches, or just tear off the leaves to save space. Rinse them and dry them.
Place the twigs or leaves in bags, close them, and freeze.
Freezing with blanched lemon balm also works well. Prepare two saucepans - one with boiling water, the other with ice water. Dip the sprig into boiling water and immediately cool it in a saucepan with ice water. Place the sprigs in a plastic freezer container.
In this form, lemon balm can be stored for about 12 months.
To make drinks, prepare ice cubes with lemon balm. To do this, put a couple of leaves in each cell of the ice mold, you can add a couple of drops of lime, and fill to the top with cold boiled water.
Then it will be enough to throw a few ice cubes with lemon balm into a glass and wait until they melt a little.
Freeze more of these cubes, because they can also be used as a tonic lotion for the face.
