How to freeze Chinese cabbage
Chinese cabbage is very expensive in winter, so it makes sense to prepare it during the season, when prices are still in summer, and they are quite reasonable.
Of course, it won’t be suitable for making salads, but it’s fine for borscht, stewing, and baking.
Peking cabbage should be finely chopped, compacted thoroughly into bags, releasing the air from them, and placed in the freezer.
If necessary, remove the required amount of cabbage from the bag and start cooking without defrosting.
To prepare cabbage leaves for cabbage rolls, Chinese cabbage should be disassembled into leaves and steamed a little, that is, put the leaves in boiling water, cover with a lid, and remove from heat. After 10 minutes, you can take out the leaves and continue working.
Cut off the thickened part of the rod with a sharp knife
Dry the cabbage leaf with a paper or cloth napkin and place the cabbage leaves in a plastic container or bag. The leaves should be as straight as possible. After all, when frozen, the structure of the leaf can easily collapse, and the leaf will simply break.
