Usually, preparing the dough takes a lot of time, and this is not convenient if guests are already on the doorstep. In addition, preparing puff pastry or yeast dough is a rather labor-intensive process, and you always want to reduce it to a minimum. Therefore, use small everyday tricks. When you have a free day, make more dough and freeze it for future use.

How to properly freeze yeast dough

If the dough is kneaded for freezing, then you should add exactly twice as much yeast to it as you usually add. Knead the dough, let it rise once, but only once, this is important! Punch it down, divide it into portions, wrap it in cling film and put it in the freezer. It will still rise in the freezer for some time, so take that into account.

Pizza dough tolerates freezing well. And after spending a couple of hours preparing it and freezing it, you can then treat yourself to pizza at any time, and at the same time spend a minimum of time.

Pizza dough recipe:
3 eggs
3 tbsp. spoons of sugar
1.5 packets of dry yeast
1 tsp. salt
1l milk/water
1 - 1.5 kg flour
200 gr. margarine

Mix as usual and let it rise. There is one more trick to speed up pizza cooking.To do this, roll out the dough immediately to the desired size, cover the flatbread with parchment paper, roll it into a roll, and pack it in cling film. Then, when defrosting, you won’t have to wait until the whole lump is defrosted and struggle with rolling it out.

How to freeze shortcrust pastry

Shortbread dough is usually used for cookies, so roll it into a thick, long sausage, wrap it in cling film, and put it in the freezer. Then, when you need it, you can simply cut it into even rounds and immediately place it on a baking sheet.

It is quite liquid, so it should be frozen in a plastic container with a tight lid so that it does not pick up unnecessary odors.

Before freezing, roll out, place the layers in cling film or parchment paper, and store in layers, if space allows, or roll up.

Label each bag or container when you knead it. In principle, the dough can be stored in the freezer for half a year, but it is still advisable to use it within 2 months. And don't be afraid to freeze food. Real chefs say that after freezing, baked goods turn out much tastier and more interesting.
