How to freeze dill for the winter - harvesting greens in bags and containers - recipe with photos step by step
Summer has come, it's time to open the season of preparations for the winter. This year I decided to start with dill; fresh young herbs arrived just in time. Dill contains a huge amount of valuable microelements, vitamins and essential oils.
In order to preserve fresh dill for the winter, we will freeze the greens. With this harvesting method, it retains its properties to the maximum, does not darken or change its beautiful bright color.
To avoid losing the flavor, you need to freeze fresh, recently cut herbs. It is best if the dill is young and does not have thick branches. This year I didn’t manage to harvest on time; my dill was a little overgrown. But it's okay, you just have to work a little more.
Freezing dill begins with preparatory work. Cut off and discard the roots. Wash the rest of the greens in a bowl with plenty of water. We change the water two or three times. Let's dry.
We separate the greens from the coarsened parts of the plants.
Finely chop the young branches.
Place the chopped leaves in a thin layer on a tray and place in the freezer for quick freezing. Then, pour them into the prepared plastic box.
While the next portion of dill is freezing, we keep the box in the freezer. We do not compact or press the greens. This way it will not stick together, but will remain crumbly.When the box is filled to the top, close it tightly with a lid and put it in the chamber for storage.
If you don't have enough containers, you can use plastic bags, but they dry out the greens a little.
In the same way, I prepare other aromatic herbs for the winter - parsley, basil, cilantro... Since they do not lose their color and taste with the preparation method, they can be used not only for preparing first and second courses, but also added to salads or decorate sandwiches.
