How to pickle green onions - we simply prepare green onions for the winter.
Harvesting green onions for the winter is done in the spring, when the feathers are still young and juicy. Later they will grow old, wither and wither. Therefore, it is during this period that it is advisable to know how to preserve green onions for the winter.
My simple recipe will help you prepare salted onions for the whole year. For 1 kg of green onions, you need to stock up on 200-250 g of salt and a couple of tablespoons of vegetable oil.
How to pickle green onions for the winter.
Let's start preparing the onions for pickling. We go through them, throw away the dried and limp ones, and wash the green and juicy ones.
Place them on a towel or sieve and let the water dry.
Next, cut the onion into 2-3 cm pieces and mix in a large container along with salt.
Place the feathers tightly in clean jars. Press with a wooden masher, spoon or pestle. When salted onion juice appears on top, move on to the next stage.
Add a couple of tablespoons of vegetable oil to compacted jars with green feathers on top and close with lids (plastic or screw-on).
You need to store jars of onion feathers in the basement or refrigerator.
Onion greens prepared in this way can be stored for a whole year, until the next young harvest. We use juicy greens as seasonings for main dishes: boiled rice, pasta, jacket potatoes, meat. Also, such salted green onions can be added to salads and sauces in winter.
