Let's take: 1.5 kg of white cabbage, 2 beets and 3 carrots, 5 cloves of garlic, 2 cups of cold water, ½ cup of sunflower oil, ½ cup of 9% vinegar, ½ cup of sugar, 1.5 tbsp. rock salt, 4 pcs. bay leaf.
How to cook pickled cabbage with beets
We will divide the entire marinating process into two stages: preparing the vegetables and preparing the marinade.
We clean the vegetables, wash them under cold water and chop them.
We cut the cabbage into squares as in the photo, approximately 4x4 cm.
Grind the beets, carrots and garlic on a coarse grater. Lightly mix vegetables, except cabbage.
Prepare the marinade. Mix sunflower oil, sugar, salt, bay leaf with water. Place on the fire and let simmer for 2 minutes until all the ingredients are mixed into a single whole.
Meanwhile, in a large container, place alternate layers of cabbage and a mixture of beets, carrots and garlic.
Pour the finished hot marinade into the pan with the cabbage. We put pressure on top and press down. The marinade should cover all the cabbage.
Leave under pressure on the table for 24 hours. Next, place the Georgian-style cabbage in clean jars and cover with nylon lids.
We put it in the refrigerator for storage.
A day later, the cabbage marinated in Georgian style is ready. The longer the cabbage sits in the jars, the more intense the pink color will become.
