Strawberry juice from Victoria for the winter - preserving the taste and aroma of fresh strawberries
There are few people in the world who don't like strawberries. But its shelf life is catastrophically short, and if the harvest is large, then you urgently have to decide how to prepare strawberries for the winter. The strawberry variety "Victoria" is an early variety. And the earliest strawberries are the most delicious and aromatic, but, unfortunately, after heat treatment most of the taste and aroma disappears. The only chance to preserve the fresh taste and aroma of Victoria for the winter is to make juice from it.
Strawberry juice from Victoria can be prepared with or without pulp. Juice with pulp is healthier and tastier, but juice without pulp looks better in a glass.
To make juice you need well-ripened berries. Place the berries in a deep bowl, cover with cold water, stir a little and immediately remove them with a colander. If you leave “Victoria” in water for a long time, the berries will become soggy, they will take on water and the juice will turn out to be too watery.
Peel the berries from the stems and pass through a juicer.
If you want juice with pulp, then the preparation is complete. To prepare filtered juice, you need to strain it through several layers of gauze. Do not squeeze too hard, otherwise the pulp will get through the gauze and you will have to filter the juice again.
Don’t be upset if a lot of pulp remains after filtration, because this is an excellent basis for cooking strawberry marshmallow, which can also be prepared for the winter.
Now, the most crucial moment. Strawberry juice cannot be boiled; it must be heated for 5 minutes at a temperature of +75 degrees. If you don't have a kitchen thermometer, just be careful. Stir the juice and if it starts to boil, turn the heat down or remove the pan from the stove.
The Victoria variety is already quite sweet, so you can do without adding sugar.
Pour the juice into sterile jars and seal them with lids. Strawberry juice from Victoria should be stored in a cool, dark place for 8-10 months.
It also has a very rich taste. strawberry syrup, but, alas, there is no aroma of fresh berries in it.
