Which berries to choose and how to pre-process them
To prepare compote, you need fruits that are ripe, but not overripe. Dogwood that is too soft will burst in boiling water and turn into mush. The natural acidity of berries can be adjusted with sugar. This collection of recipes presents the ratio of products for medium-sour berries.
First of all, the dogwoods are sorted. The stalks are removed, and the berries themselves are carefully examined, and rotten ones are discarded. The sorted fruits are rinsed with running water and placed on a sieve to drain excess moisture. There is no need to dry the dogwood too much. The seeds are also not removed from the fruit.
Recipes for making dogwood compote
In a saucepan
Place 2.5 liters of water in a saucepan on the stove. After boiling, add 150 grams of granulated sugar and 250 grams of berries to the water. Dogwood can be used both fresh and frozen. Cook the compote covered, over medium heat, not for long - 5-7 minutes after boiling again. The finished drink is not poured into glasses immediately, but after 3-4 hours, allowing the dogwood compote to brew.

In a slow cooker from dried dogwood
Three multi-cups of dry dogwood berries are placed in a five-liter multicooker bowl. For a unit with a smaller capacity pan, the ingredients are reduced proportionally.
Add 250 grams of sugar to the berries and pour cold water to the top of the bowl. To prevent the compote from running out during cooking, the distance to the edge of the bowl should be 3-4 centimeters.
Boil the dogwood drink under the lid on the “Soup”, “Stew” or “Cooking” program for 1 hour. After this, the device is turned off and the lid is not opened for another 4-5 hours.
In a slow cooker, the compote will not cool down even after 6 hours, so in order to take a sample from the compote, it is advisable to cool it with ice cubes. The technology for preparing transparent ice cubes is described in detail in our article.
Preparation for the winter with sterilization
Clean berries (300 grams) are transferred to three small jars that have been previously cleaned with soda. The volume of the containers is 700-800 milliliters. The dogwood is poured with cold water to the top of the jars, and then the liquid is immediately poured into the pan, thereby measuring the required volume. To cook syrup, take 150 grams of sugar for every liter of water drained.As soon as the compote base boils, it is poured into jars with berries.
The top of the workpiece is covered (that is, covered, not twisted) with lids heated in boiling water. Water is poured into a wide saucepan or metal basin and jars are placed in them. Slow cooling of jars after sterilization is the key to successful preservation. Therefore, for a day, the dogwood compote is placed under a warm blanket or blanket, and then put away for storage.
Without double-fill sterilization

It is very convenient to use a three-liter container. We will provide calculations of ingredients for exactly this volume of compote.
So, for three liters of drink, take 350 grams of fresh fruits. They wash them and put them in jars. 2.5-2.7 liters of water are boiled over a fire. Pour boiling water over the dogwood and cover the jars with lids that have been sterilized with steam or boiling water. After 10 minutes, the pinkish infusion is poured into a saucepan, and the jars of dogwood are covered with lids.
Add 2 cups of sugar to the infusion and bring it to a boil. Complete dissolution of the crystals is controlled with a spoon, stirring the syrup. The boiling sweet solution is poured over the dogwood again. The jars are immediately screwed or rolled up with a special key.

Concentrated compote
This drink is suitable for those who dilute jarred compotes with water before use: the berries are used more sparingly and the finished product is much larger.
Place 400 grams of dogwood in a clean jar and fill it with water up to the neck. Pour the contents of the jar along with the berries into an empty pan. Add half a kilo of sugar. The compote is placed on the fire and simmered over low heat for 5 minutes. In the meantime, the jar is sterilized.
Hot, straight from the stove, compote is poured into the prepared container and immediately screwed up.
After standing in a warm place until it cools completely, the dogwood compote is put away in the basement or cellar.
With citric acid
Dogwood compote is cooked with citric acid without sterilization, using the double pouring method. See recipe above. Only the quantity of initial products is changed. For a three-liter jar take:
- dogwood - 300 grams;
- sugar – 1.5 cups;
- water – 2.5 liters;
- citric acid – 1/3 teaspoon.
With apples
Place a glass of dogwood berries and 3 large apples, cut into quarters, into a three-liter jar. The seed boxes of the apples are removed; the seeds are not removed from the dogwood.
Sprinkle fruits and berries with sugar (300 grams) and pour boiling water to the very top of the jar. The jar is covered with a sterile lid and placed in a pan with water for further sterilization. After 40 minutes of processing, the jars are tightly screwed and insulated for 24 hours.
