Two large lemons are washed thoroughly. It is advisable to use a soap solution and a brush.

Place the fruits in a deep plate or tall glass and pour boiling water over them. This manipulation allows you to get rid of the bitterness that is in the peel. After 5 minutes, the water is drained, and the lemons themselves are cut into large pieces or wheels.

Boil 2 liters of clean water in a bowl and add lemon slices there.Boil the fruit for 7-10 minutes. At the very end of cooking, add 150 grams of sugar and a sprig of fresh or dried mint to the compote. Cover the pan with a lid and leave to cool at a temperature of 20-25ºC.

The finished drink is filtered and served with ice cubes.

With honey and ginger

Three washed and dried lemons are poured with boiling water for a couple of minutes to remove bitterness. Scalded fruits are cut with wheels, immediately removing any seeds.

Lemons are poured with 3 liters of hot water and boiled for 5 minutes. At the same time, melt 150 grams of granulated sugar in a dry frying pan. The grains should dissolve and turn into a thick golden syrup.

Sugar “burnt” is added to the pan with compote and the contents are thoroughly mixed. The fire is turned off and the drink is left to cool under the lid.

Only after the compote has cooled down, add honey (3 tablespoons). To preserve all the vitamins and nutrients in the beekeeping product, honey is added to the liquid, which has cooled to at least 50 degrees.

Before serving, the drink is poured through a sieve or left with pieces of fruit.

From frozen lemons and berries

Compote made from frozen products is not inferior in taste to a drink made from fresh fruits.

To prepare lemon and berry compote, pour 2.5 liters of water into a saucepan. After boiling, add frozen lemons and berries in a 1:1 ratio. There is no need to defrost food. Immediately add sugar (200 grams) to the compote. Close the lid tightly and cook the drink for 20 minutes from the moment it boils again.So that the berries and fruits give the syrup all their rich taste, the compote is left to steep for another 4 hours under the lid.

Winter preparation of compote with lemon

From lemons and oranges

To prepare citrus compote, take 3 lemons and 2 large oranges. Washed and dried fruits are cut with wheels. The maximum cutting thickness is 6-7 millimeters.

The pieces are placed in an enamel pan and covered with two glasses of sugar. To release the juice from the slices, lightly knead the lemons and oranges with your hands and let them stand in the sugar sprinkle for 20 minutes.

With apples

For this preparation, take 500 grams of apples and 3 large lemons. Apples are freed from the seeds and cut into small slices. The lemon is peeled, washed, and then completely soaked in boiling water for 5 minutes.

The citrus fruit, freed from bitterness, is cut with wheels. Any bones that come across during slicing are removed.

The fruits are placed in a sterile three-liter jar and filled with boiling water to the very top. Cover the jar with a clean lid and leave for a quarter of an hour.

Next, prepare the syrup. The water is drained from the jar through a sieve and half a kilo of sugar is added to it. Place the mixture on the fire and boil (boil) for 3 minutes. Bubbling hot syrup is poured over apple and lemon slices. The compote is ready! All that remains is to tighten the jars with a seaming wrench and leave them warm for a day.

With zucchini

Peel off the skin from the vegetable, cut it in half lengthwise, and clean out the insides (bones and fibers) with a tablespoon. The pulp is crushed into cubes. For a three-liter jar of compote you will need approximately half a vine of a medium vegetable or 600 grams of peeled pulp.

The slices are placed in a sterile container. Place lemon on top. To do this, the fruit is first scalded with boiling water, and then cut into cubes, rings or pureed in a blender. The bones must be removed.

Pour boiling water into the jar. After 15 minutes, the infusion is drained and mixed with sugar (2 cups). After the syrup boils again, fill the jar with it again. At the final stage, add half a teaspoon of 70% acetic acid to the jar of compote. This norm is indicated for a 3 liter jar.

How to store citrus drink

The compote prepared in a saucepan, after cooling, is poured into a jug with a lid or jar. Store it in the refrigerator for 2-3 days, no more.
