How to store homemade sausage in jars

We need to wash fresh smoked sausage (recently smoked) in warm water and then dry it with a paper towel. Let’s immediately make a reservation that if you want to use this method of saving, then make the sausages of such a size that they fit entirely into the jars you have. This method of canning does not involve cutting the sausage sticks.

Next, we need to put the sausages in containers for canning. As we said above, they do not need to be cut, but when placing them, make sure that the sausage loaves remain whole and undamaged (not broken).

It is better to lay the sausage horizontally; in a vertical position, the sausage loaves are placed only in the middle of the container.

You can preserve sausage in its own juice, but it will be more tasty and juicy if you fill the jars with our preparation with salted broth made from smoked bones.

Next, the sausage placed in jars must be sterilized, a liter container - 60 minutes, two liters - 1.5 hours.

After sterilization, we seal the jars and let our preparation cool. Canned sausage must be stored in a cool place.
