Canned tomatoes, recipe for the winter with garlic and onions - homemade preparations, step-by-step recipe with video

In order for canned tomatoes prepared for the winter to be a great success, you need to select tomatoes that are small and dense, with thick skins. It will be good if the tomatoes are plum-shaped. But this is not so necessary for home preparation.

How to can tomatoes for the winter.

When making homemade preparations for the winter, we cannot do without spices. To prepare canned tomatoes with garlic and onions according to this recipe we will need:

dill - one large umbrella;

garlic - 3-4 cloves;

allspice peas - 5-6 pcs.;

parsley - 3-4 sprigs;

purple basil (can be replaced with peppermint) - 2-3 leaves;

celery - one large sprig;

onion - one small onion;

currant leaf - 1 pc.

The quantity of spices is indicated per liter jar.

Preparation:

Place half of a large dill umbrella on the bottom pre-prepared jar.

We cut the garlic cloves into 3-4 parts and also put them in a jar.

Allspice peas: crush three of them, and leave three whole and put everything in a jar.

Add parsley leaves (leaves only), basil or mint, celery.

Cut the onion into half rings and also into a jar.

Now we put our tomatoes in the jar.Before proceeding to this stage of preparation, they can be pierced with a fork, knitting needle or simply a sharp knife. We try to lay it tightly to the very top.

Place the other half of the dill and onion umbrella on top.

Cover everything on top with a currant leaf.

Marinade for tomatoes:

1 liter of water;

2 tablespoons of salt (take a little heaping);

2 tablespoons of sugar (take a little heaping);

1 tablespoon 9% vinegar.

Preparing the marinade:

Add salt and sugar to boiling water and stir until completely dissolved. Let the marinade boil and pour the boiling marinade into the jars of tomatoes.

ATTENTION: To prevent the jar from bursting, pour the first boiling scoop of hot marinade onto a tablespoon, which we hold pressed to the glass with our other hand. How to do this correctly can be seen in more detail in the video recipe.

Fill the jar with marinade to the very top. Cover with a lid and place in a saucepan or, as shown in the video, a special autoclave for sterilization for 15-20 minutes.

Take out the jars, open the lids and add 1 tbsp. a spoonful of vinegar. Close and roll up.

ATTENTION: if we use a pan for sterilization, there is NO NEED to remove the rubber band from the lid, as stated in the video!
