How to cook apple and chokeberry compote without sterilization
This recipe is for a 3 liter jar. For smaller containers, use ingredients according to desired proportions.
For compote we need 1.5 cups of chokeberry berries. The volume of my glass is 250 grams.
Wash the berries and place them in a colander to drain excess water.
Now let's get to the apples. They are medium size for me too. Therefore, 4 pieces will be enough.
Wash the apples and cut each into 8 pieces. Using a sharp knife, carefully cut out the core with the seeds.
Fill in banks. First we lay the berries, and then the sliced apples.
While the preparatory work was going on, approximately 3 liters of water boiled.Fill the jar with the food with boiling water and cover with a clean lid. Let’s let the compote “rest” for about 20 minutes. During this time, some of the chokeberry will burst, but this is normal.
Meanwhile, measure out the sugar. We will need 2 cups of it. Pour the sugar into the pan in which we will cook the syrup for the compote.
After the allotted time has passed, we will need a special grid for draining liquids. There can be many modifications of this device.
Pour the berry-fruit infusion into a saucepan with sugar. Turn on the heat and bring the syrup to a boil.
How to roll compote for the winter
Pour boiling water over the food in the jar and immediately screw on the sterilized lid.
Turn the jar upside down. If nothing runs or drips, then the lid is screwed on properly. Wrap the jar in a warm blanket for a day. Then we put it away for long-term storage.
The homemade drink turns out very tasty! Try rolling up a few jars for the winter, I’m sure you’ll really like it.
