Carrot and lemon jam will surprise you with its aroma, taste and amber color. The recipe for this unusual jam is quite simple. Therefore, if you like to prepare unusual and original sweets with your own hands, then it is worth making.

Let's get to the point, how to make carrot jam for the winter.

Carrot

Take 1 kg of brightly colored carrots that do not yet have a rough center. It is better to choose root vegetables of the same size, so they will cook evenly.

Place the carrots in a saucepan with boiling water. Boil for 4 to 10 minutes, depending on the overall size of the carrots.

Pour ice water over the hot carrots and remove the skin very quickly.

Cut the peeled root vegetables into equal circles, cubes or slices and pour in freshly boiled sugar syrup.

The peculiarity of the syrup recipe is that you need to mix 2 cups of sugar and 150 ml of boiling water, and then bring the mass to an intense boil.

Carrots in syrup should stand for 12-13 hours, but without boiling.

After this, add another 0.5 kg of sugar to the pan with carrot jam and put it on the fire.

You need to cook the jam for so long that the carrots become translucent. At the very end, add the juice of 1.5 lemons or citric acid (2 g). You can add spices to your own taste: cinnamon or vanillin.

The sweet, tasty preparation for the winter is ready. The jam needs to be cooled in the pan and only then put into small jars with screw-on lids.

This unusual carrot jam can be eaten with tea, or you can bake pies with it. It is preferable to store it in a dark place so that the beautiful workpiece retains its bright color.
