Cauliflower lecho, or vegetable caviar - a delicious preparation for the winter
You can diversify your winter preparations with vegetable salads. Even the well-known and beloved lecho can be prepared in different ways. Lecho with cauliflower is a rather unusual dish, but it is hearty and can be served as a side dish or as a salad.

To prepare lecho with cauliflower, you need the following products:
- 1 kg cauliflower;
- 1 kg tomato;
- 1 kg bell pepper;
- 2 heads of garlic;
- 200 gr. vegetable oil;
- 100 grams of vinegar;
- salt.
Peel the tomatoes and chop them finely.
Cut the pepper into large strips.
Separate the cauliflower into florets. There is no need to boil it first, unless you like the cabbage flavor too much. In this case, you should first boil the cabbage for 10 minutes, drain the water, and cool.
This dish is convenient to prepare in a slow cooker. Add all the vegetables at once, pour in the vegetable oil, and set the timer to “stew” mode for 30 minutes. 5 minutes before the end of cooking, add grated garlic, paprika and vinegar to the lecho.
Start preparing the jars for seaming. Sterilize them, and when the timer beeps that the dish is ready, put lecho with cauliflower in jars and close them for the winter.
Cauliflower lecho is prepared in the same way in a regular saucepan.Of course, if you boil cauliflower for lecho, it is better to reduce the simmering time to 15-20 minutes so that it does not boil too much.
