But how to prepare dandelions for the winter, how to make sure that they share their beneficial properties with us in winter? Dandelion leaves, a vitamin-rich addition to winter salads or soups, are very easy to prepare. The ideal time for harvesting salted dandelions is early spring.

The height of the harvested plant should be approximately 3-5 cm. To prepare dandelions according to this recipe, you need to cut the plant just below the beginning of leaf growth, along with the “bud” of the future flower.

First, carefully wash the rosettes of the plant under running water from the ground, and then fill them with cold salt water for 1-2 hours. This procedure will relieve the dandelion preparation from excess bitterness. After the specified time, drain the water. Place dandelion leaves in clean jars and fill with salt solution. For this we need 100 grams. salt per 900 ml. water.

Close the jar with plastic lids.

The workpiece should be stored in a dark, cool place - a basement or cellar. In winter, it can be used as a salted or fermented addition to any winter salads, soups, and even meat or vegetable dishes.
