Our family eats a lot of oranges, and I always felt sorry for throwing away the fragrant orange peels of this “sunny” fruit. I decided to try making jam from the peel, the recipe for which I found in an old calendar. It’s called “Orange Peel Curls.” It turned out pretty good. I would say this is the best orange peel jam I have ever tried.

How to make curls from orange peels.

Orange zest

Using a fine grater, we remove the zest (the bright orange layer) in a thin layer, and only then separate the white pulp from the orange juicy slices. We try to separate it so that it comes off as one piece as possible.

Then, the removed white peels need to be cut into seven to eight strips along the long side.

Next, we roll the resulting strips into a spiral and string them on a thread so that they fit tightly to each other. These will be our curls.

The strung strips need to be boiled in water three times for 4 - 5 minutes, after each time giving them a contrast shower under running cold water until they cool completely.

Then, we will prepare a syrup with which we will pour our crusts and set our preparation to cook. When preparing syrup, take 1 kg of sugar and two grams of citric acid per liter of water.

We determine the readiness of the jam by dropping a drop of syrup onto a chilled porcelain plate.If it spreads, continue cooking, but if the drop holds its shape, the jam is ready. A couple of minutes (3-4) before the end of cooking, add citric acid to our preparation.

Let the finished orange peel jam brew for another day, and only then pack it into a container for storage. With such actions, the curls in the workpiece will retain their shape and are convenient to use when decorating cakes and desserts. In addition, in winter, I finely chop the prepared orange peels from jam and add them to various baked goods. And from the syrup you can make drinks and many different desserts.
