For jam you need red or white onions. Regular onion is too “evil” and is not suitable because of its bitterness. This is the main ingredient and should not be changed for anything.

Turn the heat down and simmer the onion until most of the liquid has evaporated.

Place the hot onion jam into small jars and close them with lids.

Without pasteurization, onion jam can last in the refrigerator for up to 3 months, and no more is needed.
