Lightly salted cod - a Portuguese recipe for salting fish
Cod is a valuable commercial fish, and most often you can buy cod fillets in stores. Cod is mainly used for frying, but it can be salted in the same way as any other sea fish. Cod is a fairly fatty fish, and in this it can compete with herring. But unlike herring, cod has more tender meat and a noble taste.
In Portugal, lightly salted cod is a fairly popular dish, and it is prepared according to such a simple recipe. To prepare lightly salted cod you will need:
- 0.5 kg cod fillet;
- 2 tbsp. l. coarse salt;
- 1 tsp. dried dill;
- 50 ml vegetable oil;
- Other spices - optional.
Thaw the fish and cut it into pieces.
Mix salt with dry dill and roll each piece in this mixture.
Place the fish in a jar in layers, and pour a little vegetable oil on each layer.
Lightly compact the fish, cover the jar with a lid and refrigerate for 12 hours.
The cod is salted quickly, and after 12 hours you can take the fish out of the jar, shake off the salt, and make yourself a sandwich with the most tender lightly salted cod.
