I will not talk now about the nutritional value of green beans, I will only say that this is an excellent winter snack. It is believed that canning legumes is difficult: they do not stand well, spoil, and there is a lot of fuss with them. I want to convince you and offer a simple, proven recipe that my family has gone through more than one year of testing. 😉

For pickling, you need to take young “milk” pods, in which full-fledged beans have not yet fully formed.

If they are not stained with soil, then there is no need to wash them, just clean them. Peeling means cutting off the ends on both sides of the pod and cutting or breaking it into two or three parts. The size of the pieces in my preparation can be seen in the photo.

This, in principle, is not necessary, but it is more convenient to place such pieces in a jar.

How to pickle green beans for the winter

Place a pan of water on the fire, add some salt and bring to a boil. Throw the prepared beans into a saucepan and boil for 10-15 minutes.

While the beans are cooking, preparing jars and spices. Here everything needs to be done exactly the same as when pickling cucumbers. Wash the jars thoroughly.From the spices we need: a leaf of horseradish, a couple of sprigs of dill, garlic.

If desired, you can add peppercorns, bay leaves, cloves, or any other spices that you usually use to pickle vegetables. Have you decided? Put everything in a jar.

Place the boiled beans in a colander, let the water drain, and cool slightly. As experience shows, it is not convenient to put beans into jars with a spoon; here we work with our golden hands. Do not pack the jars tightly, otherwise there will be little marinade and the beans will not marinate properly.

Let's do the first fill. Boil water and pour it into a jar of beans, let it sit for 10-15 minutes, pour the water into a saucepan and put it on the fire again.

One such procedure is enough and now, using the drained water, prepare the marinade. For a 1 liter jar of the preparation, add one tablespoon (without a slide) of salt, the same amount of sugar, and 0.5 teaspoon of citric acid. This is not for everyone; citric acid can be replaced with vinegar.

And so, boil sugar and salt until they dissolve in water and only then add citric acid/vinegar. The marinade is ready, carefully pour it into jars. If this is a preparation for the winter, then we close it with an iron lid. If you first want to try what you got, then a plastic lid is enough.

You can try the finished beans the next day. Open the jar and drain the marinade. We cut the onion into thin rings, add a little salt and press it with our fingers, sprinkle it on the beans, season with vegetable oil on top and enjoy the amazing taste of pickled green beans.

In conclusion, I want to say that this is the simplest recipe for pickling green beans, the basis, so to speak.But for a good housewife, this is all she needs - the foundation, and she will come up with everything else herself. 😉
