Pickled beets are good in winter as an independent snack, as a base for soup, or for adding to vinaigrette and other salads.

To prepare the “Pickled Beets” preparation for the winter, we will need:

raw beets - 1 kg,

water - 1/2 liter,

vinegar 9% - 100 g,

sugar - 25 g,

salt - 1 teaspoon,

black peppercorns - 5 pcs.

cloves - 5 pcs.

bay leaf - 2 leaves,

cinnamon - 1 stick.

Cooking pickled beets, step by step.

Wash the beets, peel them and cook in a saucepan for 1.2-1.5 hours.

Drain the water, cool the beets and cut them as you like: you can cubes, slices, strips, or just grate them. If the beets are small, you can pickle them whole or cut them into halves, quarters...

Place the chopped beets in clean jars prepared in advance.

Now, how to prepare marinade for beets.

Pour the required amount of water into the pan and bring to a boil.

After boiling, add the spices indicated in the recipe and let it boil again. You can change the quantity and composition of spices to your taste.

Pour the hot, boiling marinade into jars filled with beets, cover with lids, but do not tighten, but set to sterilize. The marinade should completely cover the beets.

If the jars are liter, then 10 minutes after boiling is enough.

The pickled beets are ready, screw on the lids, turn the jars upside down and leave in this position until they cool completely.

Store jars of “Pickled Beets” in a cool, dark place all winter.
