How to pickle cauliflower for the winter in a jar - with small inflorescences.
To prepare the inflorescences, we get rid of the outer leaves and rough stems of the cabbage. We divide the inflorescences into small parts of 3-4 cm in diameter and rinse them thoroughly with running water. To prevent the inflorescences from darkening, they are immediately blanched in salted boiling water, to which citric acid is also added. 15 g of salt and 1.5 g of citric acid are dissolved in 1 liter of boiling water. Boil cabbage inflorescences in this solution for no more than 4 minutes and immediately cool the cabbage by dipping it in cold water.
If it is not possible to immediately dip the inflorescences in boiling water, fill them with salt water at the rate of 15 grams of salt per 1 liter. water and keep in a saline solution for no more than an hour.
After the inflorescences have been treated with boiling water and cold water, they are placed in jars, spices are laid on the bottom and the inflorescences are poured with a boiling marinade prepared from sugar dissolved in water, vinegar essence and salt.
