Assorted marinated platter for the winter: zucchini with peppers and apples. A tricky recipe: everything that has ripened at the dacha will go into jars.
This recipe for assorted pickles was the result of my experiments with canning. Once upon a time, I simply rolled into a jar what had grown at that time in the country, but now this is one of my favorite, proven and easy-to-prepare recipes.
This assorted recipe includes:
— Salad pepper – 1kg
— Zucchini or squash – 1 kg.
– Apples – 0.5 kg
For blanching and marinade:
– Water – 1 glass (200g.)
– Apple cider vinegar (or you can use juice) – 1 glass (200g.)
— Honey 1 glass (200g.)
— Salt 30 grams per 1 liter of solution.
How to pickle assorted dishes for the winter - step by step.
We start cooking by washing all the vegetables, of course.
Remove the core (grains) from the pepper and cut it into rings 1 cm wide.
Core the apples and cut into slices.
Cut zucchini or squash into slices.
We make a marinade from the previously proposed products.
Blanch the chopped vegetables in the boiling marinade for 3 - 5 minutes and place them in pre-scalded jars.
Bring the marinade to a boil again and pour the boiling marinade over the vegetables in the jars.
We roll up the jars.
That's all, the marinated platter with zucchini, peppers and apples is ready. In my opinion, it would be difficult to come up with a simpler recipe. And how delicious it is to eat this mixed vegetable platter in winter...
