Try preparing delicious canned mushrooms at home with the addition of puree made from ripe tomatoes. To preserve this preparation, only whole and young mushrooms are used. Such delicious marinated mushrooms with tomato paste can rightfully be considered an exquisite delicacy.

Ingredients required to produce 1 kg of finished product:

  • mushrooms (any) – 0.6 kg;
  • lean (sunflower) oil – 30–50 grams;
  • bay leaf – 1-2 pcs. (optional);
  • vinegar or citric acid (to taste).

For the tomato sauce:

  • fresh tomatoes – 1 kg;
  • salt – 20 grams;
  • granulated sugar - from 30 to 50 grams.

How to cook mushrooms in tomatoes for the winter.

Tomatoes need to be peeled, chopped, added granulated sugar and salt to the puree and boiled to the desired thickness.

Now, let's get down to cooking the mushrooms.

In order to prepare our homemade preparation, it is necessary to select young mushrooms of small size, ideal, without damage.

We need to boil the selected mushrooms, and then simmer them in a mushroom broth with the addition of vegetable oil until the mushrooms are soft.

Next, you need to add pre-prepared tomato puree to the mushrooms.To prepare our homemade preparation, it is allowed to use ready-made tomato paste (30%) previously diluted 50/50 with boiled water. You need to take 0.4 kg of finished tomato paste.

Tomato sauce with mushrooms must be brought to a boil, and then packaged into prepared jars, leaving 1.5 cm from the edge of the neck of the jars free.

Then, our canned mushrooms need to be sterilized in boiling water over medium heat: 0.5 liter jars are sterilized for 40 minutes, and liter jars for one hour.

After sterilizing the preparations with mushrooms in the tomato, seal them hermetically with lids and, after checking the quality of the sealing, cool them.

In winter, these delicious pickled mushrooms in tomato sauce can be sprinkled with chopped green onions and served as an addition to any main dish.
