Instant marinated zucchini with carrots
If you have zucchini and want to marinate it without spending a lot of time, then this recipe is just for you. Today I’ll tell you how to make delicious marinated zucchini with instant carrots for the winter.

The recipe is very easy and quick to prepare, and the result will exceed all expectations. At home we call these pickled zucchini with carrots “yummy.” And so, we pickle zucchini without sterilization for the winter quickly and simply using my step-by-step description and photo.
To make Yummy you will need:
- zucchini;
- carrot;
- peppercorns;
- Bay leaf;
- garlic.
For the brine you need:
- for 1 liter of water;
- salt 2 tbsp;
- sugar 2 tbsp;
- table vinegar 9% - 120 ml.
How to pickle zucchini for the winter without sterilization
First you need to prepare all the products. Rinse and dry them thoroughly. Next, cut the zucchini into circles or crescent shapes. The thickness of the slices should be about 0.5-1 cm. Peel the carrots and grate them on a coarse grater. The garlic must be cut in half.
Place the prepared products in a jar. Place carrots, garlic, bay leaves, and peppercorns at the bottom of the jar. If someone likes more spicy preparations, then you can add 1 clove.
Sterilize jars before laying is not necessary, since we will water the zucchini 2 times.
The first time we fill our jars with boiling water and leave for 15-20 minutes. After the specified time, drain this liquid and prepare a brine based on it, adding the required amount of salt, sugar and vinegar.
Fill the jars with brine, roll up the pickled zucchini, place them with the lid down and wrap them in a warm blanket until they cool completely.
These pickled zucchini should be stored in a cool, dark place. Make the preparation in the summer, and you will enjoy a pleasant pleasure in the winter.
