Unusual pickled cucumbers with chili ketchup for the winter

Some people like fresh, others only eat salted in jars or from barrels, somebody pickled, and someone cucumber salads prefers to do it for the winter. Let's try to prepare spicy pickled cucumbers with chili ketchup for the winter. The recipe is not at all complicated, and the cucumbers taste simply amazing: moderately spicy, a little spicy and crunchy. For those who are rolling cucumbers this way for the first time, I have made a detailed recipe with step-by-step photos.
Products are designed for 6 liter jars:
- cucumbers – 3.5 kg;
- chili ketchup - 300 gr;
- bay leaf – 12 pcs.;
- water – 1.5 l;
- salt - 3 tbsp;
- sugar – 200 gr;
- vinegar (9%) – 270 gr.
How to pickle cucumbers with chili ketchup
In order for the finished pickled cucumbers to be hard and crispy, at the first stage of preparation they need to be soaked in cold water for three hours.
During this time we have time sterilize banks. Add two bay leaves to each jar.
Next, we will thoroughly wash the cucumbers with our hands to remove soil residues and cut off their ends with a sharp knife. You don’t have to cut off the ends, but this way the cucumbers in jars look more aesthetically pleasing. Then, put the cucumbers in jars.
Try to place the first row of cucumbers close to each other.
For the second row, select smaller cucumbers; larger cucumbers can be cut in half. It is necessary that the jars are filled as completely as possible.
Next, we prepare the marinade filling for our cucumbers. It’s simple to make: boil water, add salt and sugar, wait until it dissolves. Next, squeeze the ketchup into the pan. Everything boils together, then just turn it off and add vinegar.
Fill the jars with cucumbers to the top with hot marinade filling.
Next, cover the jars with boiled lids and place them in a boiler, on the bottom of which you first need to lay a cloth napkin.
Pour hot water into the boiling water so that the jars are 2/3 covered with it. After that, sterilize jars fifteen minutes from the moment of boiling.
After sterilization, jars with cucumbers must be hermetically sealed.
