Today I will make an unusual and very original preparation - pickled tomatoes with marigolds for the winter. Marigolds, or, as they are also called, Chernobrivtsy, are the most common and unpretentious flower in our flower beds. But few people know that these flowers are also a valuable spice, which is often used instead of saffron.

Ingredients:

  • marigold flowers and leaves.

  • 2 tablespoons sugar;
  • 1 tablespoon salt;
  • 1/2 teaspoon vinegar essence.

How to pickle tomatoes with marigolds for the winter

For this recipe we need to select small, dense tomatoes. Wash them and marigolds very thoroughly. Also, you need to wash and sterilize jars and lids. I would advise using liter jars, but use it at your discretion.

In clean jars, at the bottom, place a couple of marigold inflorescences and leaves, as in the photo.

Fill the jars tightly but carefully with tomatoes. Place a couple more flowers and a couple of leaves on top.

Pour boiling water over our tomato preparations and let it sit for about 15 minutes. Then, pour this water into a saucepan, add salt, sugar and bring to a boil.

Fill our jars almost completely with the resulting marinade, but so that at the end you can pour 1/2 teaspoon of vinegar essence on top. That's it, now we just roll up our jars with clean lids, turn them over and wrap them until they cool. This preparation should be stored for the winter in a cool place.

The big advantage of this method of preparing tomatoes is that you don’t need any spices. No dill, no garlic, no horseradish, nothing - except marigolds. Although this is also a disadvantage, for those who do not live in their own home, they will have to cut off the flower beds. 🙂 In any case, be sure to try this method, you won’t regret it.
