We pickle watermelons in jars with aspirin without sterilization - a step-by-step recipe for pickled watermelons with photos.
There are many ways to prepare pickled watermelons for the winter. I tried more than one until I fell in love with the recipe for pickled watermelons with spices and garlic in Kherson. Watermelons according to this recipe are sweet, piquant, slightly spicy in taste. And the pieces remain pleasantly hard due to the fact that during preparation they undergo minimal heat treatment.
In my opinion, the recipe has two important advantages: we marinate watermelons without sterilization and without peeling.
To prepare our homemade preparation you need to prepare:
- watermelon (one large or two small);
- sugar - 3 tbsp. lie (can be replaced with honey, then 4 tbsp.);
- salt - 1 tbsp. lodge;
— acetylsalicylic acid – 3 tablets;
- horseradish - a small root;
— hot peppers – 2-3 pcs.;
- mustard seeds - 1/3 tsp.
- a small pod of hot pepper;
- ground herbs: bay leaf, parsley, dill - 1 tbsp. lie
- garlic - one head (small).
The amount of ingredients is calculated for one 3-liter jar of the preparation.
How to pickle watermelons in jars for the winter without sterilization.
And so, let's start preparing. First, we need to wash the whole watermelon under running water.
Then, cut it into pieces (as for eating) and cut off the green hard rind from the watermelon. The watermelon, freed from the rind, must be cut into medium-sized pieces so that they can easily fit into the neck of the jar. The seeds can be cleaned out, but you can also leave them. This time I cleaned it up.
The head of garlic needs to be peeled and cut into small slices.
Now that we are done with chopping the ingredients, we need to place our spices (pepper, mustard, ground spices and horseradish root) on the bottom of a sterilized jar.
Then, put our sliced watermelon in the jar and pour boiling water over the preparation, after which we let the contents of the jar steam for five minutes.
Next, pour the slightly cooled water from the can of watermelon into a saucepan and put it on the fire to boil again.
Meanwhile, put garlic cloves, sugar, salt and aspirin tablets in a jar with watermelon.
At the last stage, fill the jar with our preparation with boiling water and seal it tightly with a lid.
After rolling, the pickled watermelons need to be wrapped until they cool.
In winter, we open our spicy, piquant pieces of watermelon and serve them as a side dish to any main course. Usually, even the marinade from the preparation is drunk down to a drop - nothing is wasted.
