So, we will need:
• honey mushrooms – 500 grams;
• vinegar – 3 tsp;
• sugar – 4 tsp;
• salt – 2 tsp;
• bay leaf – 4 pcs.;
• allspice – 6 pcs.;
• cloves – 6 pcs.;
• water – 1 l;
• sunflower oil – 3 tbsp;
• 0.5 l jars – 3 pcs.
How to properly pickle honey mushrooms for the winter in jars
First of all, we select and clean the collected or purchased mushrooms. We will need young mushrooms of small size. We wash them under running water. Remove leaves and other forest debris, transfer the mushrooms to a saucepan, add water so that it lightly covers the mushrooms.
Cover with a lid and once it boils, cook for 10 minutes over low heat.
At this time, you need to prepare the marinade for honey mushrooms. To do this, add vinegar, allspice, salt, sugar, bay leaf, and cloves to 1 liter of water. Let the marinade boil. Transfer semi-cooked mushrooms to the boiling marinade. Cook for another 20 minutes.
Remove the mushrooms from the heat and let cool slightly.
Transfer to ready-made clean jars. Let cool further until slightly warm.
Pour 1 tablespoon of vegetable oil into each jar on top, close with lids that do not need to be rolled up!!! Within a week we take it out and eat it. Bon appetit!!!
Pickled mushrooms should be stored in a cool place. The top shelf of the refrigerator or cellar is good for this. It is important to remember that pickled mushrooms do not need to be rolled up, but only covered with plastic lids or simply screwed with iron ones.
