Marinate tomatoes without sterilization
There are a lot of different recipes for preparing tomatoes on the Internet. But I want to offer you my version of how to quickly pickle tomatoes without sterilization and almost without vinegar. It was invented and tested by me 3 years ago.

The tomatoes turn out to be aromatic, sweet and vigorous in moderation. This method of preparation is suitable for people who suffer from gastritis or for other reasons are forced to preserve it with a small amount of vinegar for the winter. These pickled tomatoes are suitable for meat dishes, potatoes, salads, in a word, they make a good appetizer for the holiday table. I bring to your attention my detailed recipe with step-by-step photos taken. You won’t regret the time spent preparing. Plus, it takes 45 minutes to prepare. Shelf life 6 months. You can store it in the cellar, refrigerators, or on the balcony.
The composition is designed for two two-liter jars.
Ingredients:
- tomatoes (medium size) – 3 kg;
- horseradish leaves – 2 pcs.;
- sugar – 8 tbsp. spoon;
- salt – 4 tbsp. spoons;
- dill – 3 tbsp. spoons;
- currant leaves – 6 pcs.;
- cherry leaves – 6 pcs.;
- garlic – 1 head;
- bay leaf – 4 pcs.;
- vinegar 70% - 2 tbsp. spoons;
- black peppercorns – 12 pcs.
- allspice – 12 pcs.
How to pickle tomatoes without sterilization
You need to prepare the jars, sterilize them, dry them.
Place black pepper, allspice, bay leaf, dill, cherry leaves, currant leaves, horseradish into jars.
Wash the tomatoes in water. Carefully pierce the tomatoes near the stem with a needle. This is necessary so that they do not burst from the hot marinade. Place the tomatoes in a jar. Garlic on top.
Let's start preparing the marinade. Pour one 1-liter ladle of water into a two-liter jar. Pour salt and sugar into the water and stir until dissolved. We are waiting for the marinade to boil.
Pour the hot marinade into the jar and note the time - 10 minutes.
After 10 minutes, pour the marinade into the pan and boil again. When it boils, put one spoon of vinegar in the water and pour over the tomatoes. We twist the jars, turn them over, and wrap them until the morning. In the morning we go down to the cellar.
