Jam marmalade: making at home
What is the difference between marmalade and jam? After all, both of these products are prepared almost identically and the ingredients for its preparation are completely identical. All this is correct, but there is one “but”. Jam is a thinner version of marmalade. It contains less sugar, pectin, and additional gelling ingredients, such as gelatin or agar-agar, are rarely added to the jam. Strictly speaking, in English-speaking countries, only citrus fruit jams can bear the name “marmalade”; everything else is called “jam”.
But we will not find fault with the names, but will figure out how to make our usual marmalade from jam.
Marmalade from store-bought jam
You can buy ready-made jam in the store and cook from it. Store-bought packaging varies, so you need to calculate the proportions yourself.
For 100 grams of jam you need:
- 10 g gelatin;
- 100 g sugar;
- Citric acid, vanilla to taste.
Dissolve gelatin in water. Let it sit for about 20 minutes and start heating it over low heat until it is completely dissolved.
Spoon the jam into the saucepan with the gelatin and bring the jam back to a boil. Stir the jam constantly until the mixture becomes homogeneous.
Do not let the mixture boil, otherwise the gelatin will lose its properties. Remove the jam from the heat, cool and pour into molds.
Place in the refrigerator, or just a cool place, for the marmalade to harden.
Homemade jam marmalade
If your family has already gorged itself on sweet preparations, but you still want them to regularly eat vitamins, prepare jams marmalade You definitely shouldn’t force anyone to eat this delicacy.
Often homemade jams become candied from long-term storage and are not very pleasant to eat. This can happen from excess sugar, or from the fact that it was slightly undercooked in the summer. Either way, this jam will make a wonderful marmalade, but you may need to add a little more water. This is all regulated during the cooking process.
For a 0.5 liter jar of jam you need:
- 250 g water;
- 1 tbsp gelatin;
- Sugar to taste.
In all other respects, the recipe is exactly the same as the previous recipe.
