Rose petal marmalade - how to make fragrant tea rose marmalade at home
Amazingly delicate marmalade is made from rose petals. Of course, not every rose is suitable for this, but only varieties of tea, fragrant roses. The viscous aroma and unexpectedly sweet tartness will not be forgotten by anyone who has ever tried rose marmalade.
The difficulty lies in the collection of rose petals. In Crimea, entire plantations of tea roses are grown, but in our country this is rare, but you can still find a couple of bushes.
You can collect and store rose petals for about two weeks if you put the petals in a bag, then tie it and store it in the refrigerator. Nothing will happen to them until you collect the required number of petals.
How to make rose marmalade
For 100 g of rose petals we need:
- 1 kg sugar;
- 3 glasses of water;
- 1 tsp lemon juice;
- 100 g gelatin.
Place the petals in a colander and rinse them with cold water.
Pour water, sugar into a saucepan and boil. When the sugar has dissolved, place the rose petals in the syrup and cook for 5 minutes. Then cover the pan with a lid and let it brew for 12 hours.
Drain the syrup through a sieve and squeeze out the pink petals thoroughly.
If the syrup has become too pale and you don’t want to use food coloring, boil regular red rose petals separately. Any variety is suitable here, as long as the color is bright and saturated.Mix red rose decoction with rose syrup and add citric acid. This is necessary not so much for taste, but to preserve the color of the syrup.
Dissolve gelatin in hot syrup, strain again and cool.
It may happen that you don’t have the necessary molds for marmalade on hand and you just don’t want to pour it into bowls. Look around, is there a box of chocolates lying around somewhere? Its plastic insert successfully replaces silicone molds.
