Strawberry marmalade: how to make strawberry marmalade at home
There are many recipes for making homemade marmalade from various berries and fruits. The basis of homemade marmalade is berries, sugar and gelatin. In recipes, only the ratio of products can change, and instead of gelatin, you can add agar-agar or pectin. Only its dosage changes. After all, agar-agar is a very powerful gelling agent and if you add it as much as gelatin, you will get an inedible piece of fruit substance.
Strawberry marmalade can be prepared without cooking or with cooking.
Strawberry marmalade without cooking
In the first case, the strawberries should be washed, drained and pureed in a blender.
Add sugar (powdered sugar) and mix again.
Separately, dilute the gelatin according to the directions on the package. Strain it and mix with strawberry puree.
Pour the strawberry mixture into silicone molds and place in the refrigerator for 2 hours.
Once the marmalade has set, remove the marmalades from the molds and serve. For marmalade, it is better to take smaller molds so that the finished marmalades are the same size as candy.
Approximate ratio of products:
- 1 kg strawberries
- 60 g gelatin. If you have agar-agar, then for this number of berries you need no more than 15 grams.
- 750 g powdered sugar.
- half a teaspoon of citric acid.
- 250 g water
Strawberry marmalade with cooking
This marmalade will be thicker and richer, although somewhat darker than marmalade without cooking. Its composition is exactly the same as in the previous version, only the preparation process changes.
Grind the strawberries in a blender, add sugar and cook for 30 minutes. Separately dilute the gelatin.
Add gelatin to strawberry mixture and bring almost to a boil. Don't miss this moment, because gelatin cannot be boiled.
Cool the mixture slightly and pour into molds. Place in the refrigerator for 2 hours. This mass has good density and can be used for cakes, decorating desserts, or as an independent dish.
