Rowan fruit drink for the winter - a Scandinavian drink recipe

Scandinavian legend says that the first woman was created from a rowan tree. These healthy berries are shrouded in many legends, which will take more than one day to read. It is enough for us to know that rowan is useful for colds, respiratory diseases, as a prevention of cancer and much more.

There is no particular difference between chokeberry and red rowan, except that chokeberry is considered a more cultivated variety. It is no less useful than red one, but for making juices, compotes and fruit drinks, chokeberry is more convenient. It is not as hard as its red relative, and it produces much more juice.

Red and chokeberry can be mixed and a rowan fruit drink can be prepared for the winter using the same recipe. Rowan ripens by the beginning of autumn, but it is better to wait until the first frost. After this, rowan acquires greater sweetness, tartness, and becomes more rich.

To prepare fruit juice you need:

  • 0.5 kg of rowan;
  • 2 liters of water;
  • 100 grams of sugar or honey.

In fact, this is an approximate dosage, and you need to select the amount of one or another ingredient individually.

Wash the berries and pick them from the branches. If there are a lot of rowan berries, pass the berries through a meat grinder, or grind them with a blender if there are few berries.

Place the rowan puree in a sieve, let the juice drain and squeeze out a little of the cake. The cake can be ground with sugar and you can get “live jam”, or you can make rowan marmalade. If you don’t like jam, pour cold water over the cake, add sugar and put it on low heat.

Bring the water to a boil and boil for 3-5 minutes, then cover the pan and let the cake brew for 5-6 hours.

Strain the broth, mix it with juice, and the fruit drink is ready, you can drink it warm or with ice cubes. In order to preserve rowan fruit juice for the winter, it should be additionally pasteurized.

Place the pan with rowan fruit juice on the fire, bring it to the “about to boil” stage, but do not let it boil for 3 minutes. After that, very quickly turn off the heat, pour the rowan juice into bottles, and seal them with corks.

You shouldn’t pasteurize rowan fruit drink for more than three minutes, otherwise most of the vitamins contained in rowan will die.

If you are not sure that such pasteurized fruit juice is healthy, freeze fresh rowan berries in the freezer and prepare fruit juice as needed.
