Is it possible to make juice from green apples for the winter?

Surprisingly, the juice from green, unripe apples is much tastier than from fully ripe ones. It may not be as aromatic, but its taste is richer and more pleasant. It is not cloying, and the sourness reminds of summer, and at the same time increases appetite.

To make green apple juice, you only need apples and sugar.  

Pasteurized apple juice from a juicer

Wash the apples and cut them into pieces so that they fit into the neck of the juicer. It is not necessary to clean them, just remove rotten areas, if any. 

Using a juicer, extract the juice. No matter how good the juicer is, you get juice with pulp.

It is very useful and in winter you can make it into homemade apple marmalade. If you want to get rid of the pulp, you need to strain the juice several times through several layers of gauze.  

Pour the juice into a saucepan and add sugar at the rate of 100 grams of sugar per 1 liter of juice. 

Skim off the foam and heat the juice, stirring until the sugar is completely dissolved and steam begins to rise from the pan.

Remove the pan from the stove and pour the warm apple juice into bottles and pasteurize:  

  • 05 l. -30 minutes
  • 1 l. – 60 minutes

After that, screw the lids tightly and wrap the apple juice until it cools completely. 

Green apple juice without pasteurization 

Squeeze the juice from the apples, strain it and add sugar.If the juice is too sour, dilute it with boiled water. But in this case, you will have to add more sugar. Refer to the following recipe:

  • 1 liter of juice;
  • 200 gr. water;
  • 200 gr. Sahara.

Heat the juice in a saucepan for 10-15 minutes at a temperature of +80 degrees, but do not let it boil. 

In this case, all bacteria will die, but beneficial substances will remain. Pour the hot juice into dry, sterilized jars and immediately close them with lids.
