This recipe for making bean salad for the winter is a unique preparation option for quickly preparing a delicious dinner or lunch. Beans are a source of many useful vitamins and microelements, and in combination with peppers, carrots and tomatoes, you can easily and simply make a healthy and satisfying canned salad.

For everyone who wants to preserve this delicious salad with beans for the winter, I’m posting here my simple step-by-step recipe with photos.

Required ingredients:

- onion - 2 kg;

— carrots — 2 kg;

— bell pepper — 2 kg;

- garlic - 3 heads;

- salt - 2 tbsp. spoons;

- sugar - 3 tbsp. spoons;

- vinegar - 120 gr.;

- beans - 3 cups;

- tomato - 3 kg.

How to preserve bean salad

The standard start with which I start preparing most preparations for the winter is this preparing jars for canning. I wrap it in half-liter and small mayonnaise and salad jars. We select the ones we need, wash and sterilize them.

Then it’s time to prepare the main ingredient - you need to cook the beans. In order for the grains to become ready quickly and not overcook, you need to soak them for several hours (4 will be enough) in clean cold water. Then, after changing the liquid, it is worth boiling until not fully cooked in lightly salted water.

While the beans are cooking, let's get to the other ingredients.

The onion should be finely chopped and fried. Since this canned salad can be eaten as an independent dish or as a dressing for borscht, it is necessary to fry the onions thoroughly, since the smell of stewed onions is not pleasant to everyone.

When the onion has become slightly golden, mix all the ingredients in a deep saucepan: grated carrots, 3 medium-sized garlic heads, finely chopped bell pepper.

All components should be mixed and the beans should be added in advance through a sieve, draining the liquid in which they were cooked.

Then, it’s the turn of the tomato: we pass the tomatoes through a meat grinder and mix them with all the other vegetables. It turns out to be such a thick porridge.

Boil in a common cauldron for 45 minutes, then add 3 tablespoons of sugar and 2 tablespoons of salt. Now, you should boil for another 15 minutes, adding 120 grams of 9% vinegar. Place and seal in jars.
