For 1 kg of already peeled lemons, take 1.5 kg of sugar and 450 g of water.
Place the peeled lemons whole in boiling water. Let them stay there for 15 minutes.
Next, we sharply change the temperature regime. Lemons are sent to the coldest possible water. They will cool down there.
In the meantime, let's make syrup. Boil water and sugar. Everything is as usual - nothing new.
The lemons have cooled, let's move on to cutting. Using a sharp knife, divide into slices and remove the bones. If you are lazy, the seeds will give bitterness to the prepared jam.
Place in an enamel container. Pour in half the hot syrup. Let it sit for 10-12 hours. Add the rest and cook.
