My family is already a little tired of the traditional homemade adjika made with tomatoes. Therefore, I decided to deviate from tradition and prepared an unusual and very tasty adjika for the winter from plums with the addition of tomato paste. A very convenient recipe. This homemade preparation does not require long-term boiling and the products for it are accessible and inexpensive.

Ingredients for homemade spicy plum adjika:

Eel plum

— plums (any variety, but good in the “Ugorka” recipe in the fall) — 2.5 kg. ;

- tomato paste - 2 tbsp. lodge;

- garlic - 200 g;

- hot pepper - one or two pods;

- salt - 1 tbsp. lodge;

- sugar - one glass.

How to prepare adjika from plums for the winter - step by step.

First you need to wash the required number of ripe plums and remove the seeds from them.

Then we grind the plum halves in a meat grinder.

Next, we peel the garlic and chop it in any available way (press, meat grinder, food processor).

From hot peppers, you need to remove the stem and seeds, and then grind them in a meat grinder.

Now, we mix the ground plums, garlic and pepper until smooth. Without interrupting stirring, add salt, sugar and tomato paste to our homemade preparation.

Next, let’s cook adjika from plums.

After the mixture has boiled, turn the heat to low and, stirring constantly, simmer for another 20 minutes.

Then, pour the plum preparation into prepared sterilized jars and roll up their lids. After rolling, turn the jars over (put them on the lids) and wrap them for a couple of hours.

Our tasty and appetizing adjika made from plums is moderately spicy, with a piquant plum sourness and perfectly complements meat and fish dishes. Also, sometimes I marinate meat for barbecue in this adjika. So, it is good not only as a seasoning, but also as a marinade.
