I present to housewives one of my favorite recipes for canning tomatoes with vinegar. I fell in love with this recipe for its ease of preparation (we don’t need to sterilize the preserves) and for the well-chosen proportions of ingredients.

Marinated tomatoes are moderately sweet, spicy, with a pleasant aroma of garlic and lettuce. Let the step-by-step photos taken for the recipe become your helpers.

The ingredients are for two 3 liter and one 1.5 liter jars:

  • tomatoes - 3.5 kg;
  • hot pepper – 1 pc.;
  • salad pepper – 2 pcs.;
  • garlic - 1 head.

Marinade:

  • water – 2 liters;
  • salt – 70 g;
  • sugar - 150 gr;
  • vinegar – 150 gr.

How to cook spicy-sweet tomatoes for the winter without sterilization

It is better to select tomatoes for pickling that are small in size and firm. Sort out overripe and underripe. Place the tomatoes in a large bowl, fill them with cold water and thoroughly wash the soil with your hands.

During the washing process, we try to reject soft and spoiled ones, and remove the green stalk. Place the prepared tomatoes tightly in jars and put a saucepan with two liters of water on the fire to boil.

While the water is boiling, let's prepare the remaining vegetables. Salad and hot peppers need to be washed and the seeds removed. Peel the garlic.

After this, we need to grind the peeled vegetables into pulp in a meat grinder or blender.

The little secret of my recipe is that to obtain a more intense aroma of pickled tomatoes, I add garlic, sweet and bitter peppers to the cans of preserves in ground form.

Next, pour boiling water over the jars of tomatoes for ten minutes.

While the tomatoes are steaming, you can prepare the marinade from the ingredients according to the recipe. Boil water, add sugar and salt and stir until dissolved, turn off the heat and add vinegar to the brine.

Drain the water from the cans of tomatoes completely. Add ground pepper and garlic to the jars with a spoon, pour boiling marinade over them and seal with lids.

After seaming, jars of tomatoes should be wrapped in a blanket for three hours.

You can store spicy snack tomatoes in your regular pantry.

In winter, when you open pickled tomatoes prepared according to my recipe, you will be surprised at how rich, spicy, pepper-garlic aroma and taste they have. By the way, my family drinks every drop of the marinade, strained through a sieve. I can’t even raise my hand to pour out such deliciousness.
